Apple cake with pecan nuts, raisins and spices

- Pre-heat the oven to 180°C. Grease a round 23cm tin with canola oil.
- Separate the eggs and whisk the egg whites in a large bowl until stiff. Set aside.
- Dice the apples.
- Combine the diced apples, sultanas, chopped pecans, clove, nutmeg, cinnamon and vanilla essence and set aside.
- Using an electric or hand mixer, mix the egg yolks, brown sugar, canola oil and butter until the mixture is smooth.
- Combine the whisked egg whites with the “Mix Dolci” and apple mixture, and mix carefully.
- Add the baking powder.
- Pour the mixture into a cake tin and bake for approx. 35 minutes.
- Dust with sugar and cinnamon before serving.
- Tip: You can substitute bananas for apples, raisins for sultanas and Brazil nuts for the pecans.
