It tastes like summer! A light strawberry cream mousse in a loose sponge cake pastry – surprise your darlings!

Ingredients

150 g
120 g

Preparation of the filling:
300 g
strawberries
500 ml
whipped cream
100 g
sugar

Preparation

Preparation of the batter:

  • Whisk the eggwhites and the salt till stiff. The mixture is stiff enough, if a cut with a knife remains visible.
  • Stirring continuously, alternately add egg yolks and sugar. Carefully fold in sieved cake mix.
  • Line a baking tin with greaseproof paper and pour mixture onto it evenly. Bake in pre-heated oven.
  • To cool place on a sugared tea towel (use Schär vanilla icing sugar) and roll up whilst still warm with the help of the towel. When cooled re-open the roll.

Preparation of the filling:

  • Mash about 200 g of strawberries with fork.
  • Whisk cream till stiff and put about a cup into an icing bag.
  • Mix the rest with the strawberries.
  • Cover sponge base with strawberry cream, roll up and decorate with piped cream and remaining strawberries.
