Fruity, sweet temptation: chocolate cake with apricots – wonderfully refreshing on hot summer days! This cake is also extremely quick and easy to make – on the table fresh from the oven in just 20 minutes!

Ingredients

200 g
2 bars
plain chocolate
5
eggs
200 g
butter
150 g
sugar
1 package
vanilla sugar
1 pinch/es of
salt
3 tbsp
baking powder
800 g
tinned apricots
For the decoration:
icing sugar

Preparation

  • Melt the chocolate in a bain-marie and leave to cool slightly. Beat the egg whites until they form stiff peaks and place to one side.
  • Cream together the butter, sugar and vanilla sugar. Gradually stir in the egg yokes until the mixture is light and creamy.
  • Mix together the baking powder and Schär Mix Pâtisserie and stir this and the chocolate into the mixture. Gently fold in the egg whites.
  • Spread the mixture over a baking tray lined with baking parchment. Drain the apricots and spread them evenly over the cake batter.
  • Bake the cake in a fan oven at 175°C for 30-35 minutes and leave to cool on a wire rack. Dust with icing sugar before serving.
