This sweet dish was first made centuries ago in Sicily and is typical of the region's cuisine. Cannoli are made of a fried roll of pastry filled with a sweet ricotta cream.

Ingredients

For the dough:
200 g

egg yolk

sugar
a little bit of
vanilla sugar
1 pinch/es of
salt
olive oil
peanut oil
For the filling:
500 g
ricotta cheese
200 g
sugar
100 g
chocolate curls
100 g
candied fruit

Preparation

Knead together all the ingredients for the dough to form a homogenous mixture. Wrap in cling film and leave to stand for approx. 20 minutes at room temperature. Use a rolling pin to roll out the dough until it is thin, cut squares of roughly 10 cm and roll around a greased cannoli mould (available from specialist shops). Spread with a bit of egg white when you are rolling them over so that they stick together better. Fry in plenty of olive oil (or groundnut oil). For the filling, mix together the ingredients and use a piping bag to put it into the cannoli. Dust with icing sugar.
