Cannoli siciliani (Sicilian filled pastry rolls)

This sweet dish was first made centuries ago in Sicily and is typical of the region's cuisine. Cannoli are made of a fried roll of pastry filled with a sweet ricotta cream.

Ingredients

For the dough:
200 g

egg yolk
20 g
sugar
a little bit of
vanilla sugar
1 pinch/es of
salt
olive oil
peanut oil
For the filling:
500 g
ricotta cheese
200 g
sugar
100 g
chocolate curls
100 g
candied fruit

Preparation

  • Knead together all the ingredients for the dough to form a homogenous mixture.
  • Wrap in cling film and leave to stand for approx. 20 minutes at room temperature.
  • Use a rolling pin to roll out the dough until it is thin, cut squares of roughly 10 cm and roll around a greased cannoli mould (available from specialist shops).
  • Spread with a bit of egg white when you are rolling them over so that they stick together better. Fry in plenty of olive oil (or groundnut oil).
  • For the filling, mix together the ingredients and use a piping bag to put it into the cannoli. Dust with icing sugar.
