- To start making the red velvet cake, heat the oven to 170 ºC with heat up and down. Then grease the base and walls of a mold with a little oil so that the baking paper sticks. Reserve.
- In a story, beat the egg whites with the sugar until you get a consistent meringue that forms peaks. To this meringue, add the yolks mixing carefully. When they have been well incorporated, add the butter, vanilla powder, cocoa and milk. After you have completely integrated everything, add the colouring and flour with enveloping movements.
- Transfer the dough to the previously greased and lined baking paper mold and place the cake in the oven at the same temperature for 20 minutes. After that time, lower the temperature to 150 ºC for another 20 minutes.
- While the cake is baking, prepare the cream cheese by mixing the cream cheese with the icing sugar until it is well dissolved. Once this is done, add the cream, stir and let it rest in the fridge until the cake is removed from the oven and it has cooled completely.
- Cut the edges of the cake and put on the plate or base where the cake is going to be presented. Cover the surface with the cream cheese, spreading a homogeneous layer. Then make peaks by supporting and lifting the spatula to create texture and relief. To finish, sprinkle a little cocoa powder and serve.
