Sometimes staying classic is the best thing you can do, and it doesn't get much more classic than a strawberry cheesecake. This gluten free strawberry cheesecake recipe is sure to be a crowd pleaser with its crunchy, buttery, biscuit base layered with the smooth, sweet, creamy layer topped off with delicious, tart juicy strawberries. This delightful strawberry cheesecake can be served all year round, but we think it goes best with afternoon tea on a hot summer’s afternoon. - Put the crushed biscuits into a bowl with melted butter. Mix it together thoroughly.
- Press the mixture into the base of your tin. (diameter 20 cm)
- Soften the gelatine sheets in cold water for 10 minutes. Then heat up the lemon juice and let the gelatine sheet melt into the juice.
- Mix cream cheese, whipped cream and condensed milk.
- Mash 2/3 of the trimmed strawberries and pour the pure into filling. Mix well.
- Stir in gelatin mixture.
- Refrigerate the cake for 4 hours, or overnight.
- Serve with remaining strawberries.
