What could be more festive than gingerbread cookies? This gingerbread dough makes the house smell amazing and it’s perfect for Christmas.

- Stir the dark syrup in a heavy-bottomed pot over medium heat.
- Add the sugar, vanilla sugar, salt, and gingerbread spice.
- Stir until the sugar has melted, then add the chopped butter and stir until the butter is melted.
- Now remove the pot from the heat and let the mixture to cool down a bit.
- Beat in the eggs one at a time to the cooled mixture.
- Combine together in a separate bowl baking powder, guar gum, flour and mix them together.
- Now add the flour mix to the cooled mixture.
- Mix the dough carefully with a wooden spoon and wrap it in a plastic wrap.
- The dough will be soft at this point, but it’ll firm up in the fridge. Let it chill in the fridge at least 4 hours or overnight.
- Before baking, take the dough out of the fridge and let it stand at room temperature until the dough is rollable and soft.
- Heat the oven to 180°C. Now flour your hands, rolling pin and work surface with flour. Roll out the dough thinly and use cookie cutters to cut out shapes.
- Bake them about 10-15 minutes (depending on the size of the cutters you use, they might need a few minutes more or less cooking in the oven).
- Once cooled down, frost and decorate as you desire.
