‘Tis the season for some sweet, spicy and sugary snacks! Bake up some Christmas spirit with these gluten free gingerbread goodies.
You know it’s Christmas when the kitchen smells of gingerbread cookies. There’s just something special about that combination of spices, sugar and (gluten free) flour. This gluten free gingerbread cookie recipe, however, takes that special to a whole other level by adding even more seasonal flavours. Ground almonds, candied citrus zests and marzipan make these gluten free gingerbread cookies the ultimate Christmas treat. The orange and citron peel play beautifully with the warm gingerbread spices, while the almonds and marzipan lend the cookies an unbeatable nutty richness. Perfect for dunking in tea or warm milk.
- Stir the marzipan smoothly with 1 egg, then beat with the remaining eggs and sugar until the mixture is frothy.
- Next work in the nuts, almonds, baking powder and the sieved flour.
- Using two tablespoons or an ice cream scoop, place portions of dough onto the baking tray.
- Be sure to keep plenty of space between the dough portions, as they will spread in the oven.
- Bake on the middle shelf in the oven for approx. 25 -30 minutes.
- Once cooled, the gingerbread cakes can be iced with chocolate or a sugar glaze.
- Tip! Try chopping the candied orange and lemon peel finely or grinding them in a mixer before adding them to the dough.
