Fine coconut macaroons, lightly browned to a fine crispness. A dream in white!

Ingredients

egg whites

sugar
200 g
coconut flakes
1 pinch/es of
salt

Preparation

Beat the egg whites with salt until stiff and fold under the remaining ingredients. With two demitasse spoons or with a piping bag, make little piles on a baking tray that has been covered with greaseproof paper (wax paper). Bake in a preheated oven at 140° C. (275° F. / Gasmark 1) for about 20 minutes. The biscuits should remain light in colour; they are done as soon as they can easily be removed from the greaseproof paper.
