Gluten-Free Cinnamon Rolls

  • In a large bowl, weigh out the dry ingredients for the dough and set aside. In a separate, smaller bowl, combine the warmed milk with the yeast, eggs, and honey. Once the yeast has dissolved, add the liquids to the dry ingredients and knead until everything is well combined. Then add the softened butter and continue kneading until you have a smooth, elastic dough. Leave the dough to rise until doubled in size, which at room temperature (25 °C) should take about an hour and a half.
  • While the dough is resting, prepare the cinnamon butter filling. Make sure the butter has been left out of the fridge long enough to reach a soft, pomade-like texture. This means it should be soft but not melted, so that you can easily mix it. Use a rubber spatula and a large bowl to incorporate the sugar and cinnamon thoroughly into the butter. Cover the bowl with cling film and leave it out of the fridge until the dough has finished proving.
  • When the dough is ready, roll it out with a rolling pin. A tip to make this easier is to divide the dough into two parts so you can roll each one evenly. Once the dough is about half a centimetre thick, spread a thin layer of the cinnamon-sugar butter evenly over the surface. Roll the dough up tightly, then cut the cylinder in half and repeat this process until you have rolls approximately one centimetre thick. Arrange the rolls flat and well-spaced on a baking tray lined with baking parchment. Cover the tray with cling film and let the rolls prove again until doubled in size.
  • Preheat the oven to 200 °C once the rolls have risen sufficiently. When the oven reaches temperature, place the tray in the oven and lower the temperature to 180 °C. Bake for about 35 minutes, or until the surface is golden brown.
