Prepare to channel Marie Antoinette and lose your head over this deliciously spongy gluten free brioche recipe. It’s light and fluffy, moist and buttery, and has a delightfully delicate sweet taste. It’s no wonder that this French bread has been royally confused with a cake. The best thing is, though, that it doesn’t matter anymore because the brioche dough works wonderfully in sweet and savoury dishes alike. Use it as the base for an extra indulgent gluten free French toast; as a bun for a decadent gluten free burger; or in a deluxe gluten free bread pudding. All that’s left to say is: let them eat brioche!

- Mix all the dry ingredients.
- Add the warm milk, egg and melted butter and combine using a dough hook on your food processor. Cover and leave to rise for 45 minutes.
- Knead the risen dough on a lightly oiled surface. Divide into four.
- Roll out each dough ball into a long line and plait.
- Put the plaits onto a tray lined with baking paper, cover and allow the brioches to rise for 15 minutes.
- Brush the top with a beaten egg and dust with granulated sugar.
- Bake in the oven at 175°C for about 20 minutes.
