- First, mix all the Pad Thai sauce ingredients in a bowl. You can gently heat the mixture to help the honey and sugar dissolve better.
- Bring a large pot of salted water to a boil and cook the spaghetti until al dente. This usually takes about six to seven minutes after the water comes back to a boil, but it’s important to taste it and drain it at the right time so it doesn’t overcook. If overcooked, the pasta may break when stir-fried.
- In a pan, sauté the onion cut into julienne strips over high heat until it starts to brown.
- Add the peanuts and prawns and stir-fry everything well. When the prawns are cooked, add the egg and stir until it sets.
- Once the pasta is cooked, drain it well and add it to the pan with the sautéed ingredients, tossing thoroughly.
- When the pasta is well combined, add the sauce and stir-fry for one more minute.
- Serve and garnish with more peanuts, freshly chopped spring onion, and bean sprouts.
