Quick to make: a light, airy temptation for coffee hour.

Ingredients

150 g
120 g
sugar

eggs

baking powder
1 pinch/es of
salt
200 g
apricot jam
or
200 g
favourite filling
a little bit of
icing sugar

Preparation

  • Separate the eggs.
  • In a bowl, beat the egg whites with the salt until stiff. While continuing to stir gently, alternately add the sugar and the egg yolks.
  • Sift the flour and then mix in well with the eggs.
  • Cover a baking tin with greaseproof paper (wax paper) and pour the batter over it, spreading it evenly.
  • Bake in a preheated oven at 180 °C (350 °F / gas mark 4) for around 15 minutes.
  • Gently remove the cake from the paper by turning it over onto a damp tea towel that has been sprinkled with a little sugar.
  • Spread the jam or the filling over the cake and roll it up. Sprinkle with the icing sugar.
