Beat the butter with the sugar and vanilla sugar until creamy. Be careful: if the butter is beaten for too long, the cake will become dry.

A very special occasion deserves its own very special cake. And this light, fluffy, soft sponge cake topped with berries makes for a summery and fruity gluten-free cake that turns any party or event into something extra special.
Using a 26 cm springform tin
Preparation of the base:

Mix the flour and baking powder and sieve them. Stir them into the butter mixture alternately with the eggs and the milk in three steps.
Step 3:
Grease and flour the springform tin. We recommend not using breadcrumbs, as they make the surface of the cake too dry.
Step 4:
Pour the mixture into the tin and smooth out.
Step 5:
Preheat the oven to 190°C top/bottom.
Step 6:
Put the cake in the hot oven and bake for about 55 - 60 minutes. Insert a test stick in the cake as every oven bakes differently.
Step 7:
After baking, place the base of the tin upside down on a cooling rack and cover with a kitchen towel. Leave to cool.
Preparation of the filling:
Step 1:
Whip the cream with the cream stabilizer.
Step 2:
Mix mascarpone, yogurt, icing sugar, vanilla sugar, lemon zest and salt together in a large bowl.
Step 3:
Carefully fold the cream mixture into the mascarpone and yoghurt mixture.
Preparation of the Naked Cake
Step 1:
Remove the base from the tin and cut through 2 times to get a total of 3 cake bases.
Step 2:
Cut the top base a little straight if it is uneven.
Step 3:
Spread the bottom cake base with about one third of the filling. Leave approx. 0.5 cm free at the edge.
Step 4:
Top with blueberries. A straight surface should be created and approx. 50 g of blueberries left over.
Step 5:
Place the second (middle) base on top and gently press until the filling almost reaches the edge.
Repeat the procedure: spread the second third of the filling onto the base and, again, leave approx. 0.5 cm free at the edge.
Step 6:
Top with raspberries. There should be 50 g of raspberries left over.
Step 7:
Place the last base on top and spread the rest of the filling to create a small edge. Arrange the halved strawberries on top and decorate with the remaining raspberries, blueberries and mint leaves.
Step 8:
Chill the cake for 2 hours.
