Austrian Vanillekipferl (vanilla crescents)

These delicious morsels with a fine vanilla flavour are just the biscuit on a cosy Christmas evening.

Ingredients

200-210 g
60-80 g
sugar
1 pinch/es of
salt
2
vanilla pods
or
3 packages
bourbon vanilla sugar
2
egg yolks
200 g
ground almonds
200 g
cold butter
For sprinkling:
100 g
sugar
2 packages
vanilla sugar

Preparation

  • Quickly knead all the ingredients together to form a dough.
  • Wrap the dough in foil and leave to stand for 30 minutes in the fridge.
  • With cold hands, shape the dough into small crescent shapes and place on a baking tray lined with backing parchment, making sure that the biscuits are not too close together.
  • Bake in the oven at 170° for 10–12 minutes.
  • Leave the biscuits to cool on the baking tray; otherwise the crescent shapes will collapse.
  • Mix together the sugar and vanilla sugar in a shallow bowl.
  • Carefully remove the Vanillekipferl from the baking tray and gently roll them in the sugar and vanilla sugar mixture. Only remove 3–4 biscuits at a time.
