Exquisite biscuits: Each nut is a noble treat!

Ingredients

120 g
50 g
sugar
70 g
ground hazelnuts
1 pinch/es of
salt
1 pinch/es of
cinnamon
grated zest of 1/2 organic lemon

egg
1
egg yolk
80 g
cold butter
For the decoration:

egg white
60 g
sugar
50 g
ground hazelnuts
40 g
hazelnuts

Preparation

  • Knead together the flour, sugar, hazelnuts, salt, cinnamon, lemon rind, egg, egg yoke and butter to form a dough.
  • Roll the dough into a fat sausage shape, wrap in cling film and leave to stand in a cool place for 1 hour.
  • Cut the dough into around 40 equally-sized slices and place on a baking tray lined with baking parchment.
  • Press into shape where necessary. Beat the egg white until it forms stiff peaks.
  • Gradually add the sugar and continue to beat the mixture until it forms really stiff peaks.
  • Gently fold in the hazelnuts. Place the mixture in a piping bag without a nozzle and pipe a small amount on top of each of the biscuits.
  • Place a hazelnut on top of each. Bake the biscuits in the oven for approximately 15 minutes at 170°.
