- Preheat the oven to 170°C (top and bottom heat setting) and line a baking tray with baking paper.
- Knead the seived flour, sugar, hazelnuts, salt, cinnamon, lemon peel, egg, egg yolk and butter until you’ve achieved a shortcrust dough.
- Shape the dough into a sausage, wrap in clingfilm and leave to chill for 1 hour.
- Cut the roll into approx. 40 3 – 4 mm thick rcircles and place on the tray.
- Tidy up the shapes by hand so that they’re all circular. Beat the egg white until it forms stiff peaks, drizzle the sugar in and continue beating.
- The egg whites must be very, very stiff. Loosely fold in the hazelnuts.
- Put the mixture in an icing bag (without a nozzle) and place dabs of mixture onto the dough rounds.
- Place a hazelnut on top of each biscuit. Bake the nut biscuits in the oven for approx. 15 minutes.
