Apricot jam biscuits

The classic biscuit with the hole in the centre and jam! A hit every time!

Ingredients

200 g
70 g
sugar
100 g
butter or margarine
1 pinch/es of
salt
2
eggs
2 tbsp
dry Marsala
30 g
apricot jam
grated lemon peel

Preparation

  • Sift the flour into a mound on a work surface, make a hollow and put in the sugar, soft margarine, grated lemon peel, salt, eggs and marsala.
  • Knead everything with your hands, but not for too long.
  • Roll out the dough with a rolling pin until you have a 3-4 mm sheet.
  • With a glass, cut out circles and with the remaining dough make as many rings as there are circles.
  • Cover the circles of dough with a teaspoon of jam and put the rings on top.
  • Put the biscuits on a greased and floured pan and bake in a preheated oven.
