These Christmas cookies without gluten contain three secrets: chocolate sprinkles, almonds and honey. Together with good coffee they can melt any heart.

xanthan gum

For the decoration:

  • Add the butter and honey in a mixing bowl and mix with a hand mixer.
  • Mix in the flour, the xanthan gum and the baking powder and then add them to the butter-honey mixture.
  • Wrap the dough in a wrapping film and place it in the refrigerator for about 3 hours. Put some flour to the working surface.
  • Knead the dough with the hands, then flatten it with a rolling pin till it becomes about 1/2cm thick.
  • Cut out the hearts and place them on a baking tray covered with baking paper.
  • Bake in the pre-heated oven at 200 degrees (top and bottom heat, on the middle rail) for 6 - 8 minutes. Let them cool down.
  • Use the water bath to melt the chocolate glaze and then dip the hearts into the glaze, so they are half-covered with chocolate.
  • Allow the cookies to dry and place them in a cookie jar.
