This delicious dish originated in the Swabia region of southern Germany, but it has since become a firm favourite throughout Germany and Austria.

Ingredients

350 g
3
eggs
400 ml
milk
1 tsp
salt

Preparation

  • Beat the eggs and add the milk.
  • Add the flour and salt and work into a smooth dough.
  • Leave to stand for 20 minutes.
  • In the meantime bring plenty of salted water to the boil.
  • Rub the dough on the spätzle grater so the shavings go straight into the boiling water.
  • Boil until the spätzle rise to the surface.
  • Drain and then rinse through thoroughly with cold water.
  • Serve the spätzle with a ham and cream sauce.
