Although they’re the classic mardi gras dish, crêpes are not, and should not be, just for pancake day. And this gluten free crêpe recipe is so quick and easy to follow that you need no excuse to whip up a batch whenever you want a sweet or savoury snack. This recipe goes sweet and recommends adding Nutella, but you can also try jam, golden syrup or lemon and sugar. If it’s savoury you’re after, try cheese, cream and mushrooms; smoked salmon, peach jam and brie; or goat’s cheese, honey and walnuts. But don’t stop there. The beauty of crêpes is that you can fill them with anything.
- Whisk the flour with the eggs, vanilla sugar, salt and butter.
- Add the milk while continuously stirring until a smooth batter forms.
- Rest for 30 minutes at room temperature.
- Heat a non-stick pan (24 cm diameter) and brush lightly with ghee.
- Pour half a ladleful of batter, briefly pushing it to one side and spread thinly over the pan base using a dough scraper.
- Fry the crêpes until golden brown on both sides at medium temperature.
- Spread with Nutella while still hot and eat immediately.
- The crêpes also taste delicious spread with jam or apple purée.
