This variety of pasta is traditionally eaten in Puglia with turnip tops or with a tomato sauce. What will be your favourite condiment?

Ingredients

salt

Preparation

  • Pour into a tureen, flour, egg whites and salt, and work it all. If the mixture becomes too dry, add a tablespoon of water.
  • Keep working it until you get a smooth firm dough. Make little rolls as thick as a finger and cut them into thin slices (3-4 mm thick).
  • Take the disks one by one and flatten them with your thumb, rubbing them gently on a work surface, to give them the typical hollowed shape.
  • Let the orecchiette pasta sit until they are well dried. Cook in salted water for about 10 minutes, then drain and season to taste.
