- In a bowl, mix all the liquids and add the yeast with the sugar and dissolve it. Once dissolved, add the flour and start kneading. Halfway through kneading, add the butter, salt and add the ingredients until you get a smooth and slightly elastic dough.
- Let it ferment for 50 minutes in a temperate area.
- Degas and roll out the dough on baking paper or on a non-stick sheet for the oven until it is about a centimeter and a half thick. Cut circles with an 8.5 – 9 cm pastry cutter and let them ferment on a lightly floured tray until they double in size. We will cover them with a damp cloth or a film to prevent them from drying out.
- To cook the muffins, we will put a pan over medium heat. When it is hot, put them on each side for five minutes with the lid of the pan on. The steam they generate will be used for correct cooking and rising.
- They can be eaten at room temperature if they are freshly made or slightly heated in the pan if they are from the day before so that they recover juiciness and a fluffy texture. In this case they have been filled with cream cheese, paprika and a French omelette, but any type of lettuce, tomato or sausages can be added.
