This gluten free crescentina recipe comes all the way from the busy streets of Bologna, Italy. These bread-like pieces of heaven are very easy to make and taste delicious. They are typically enjoyed with soft cheeses and cold cuts of any meats of your choice, and can also be enjoyed with sweet condiments like jam, honey or even chocolate spread. They are perfect as breakfast or a snack but also go wonderfully as a side to any meal.

- Dissolve the yeast in water and knead together all the ingredients in a bowl until they are well combined.
- Cover the dough and leave to rise for 2 to 3 hours.
- Stretch it out (but not too thinly) and cut out the Crescentine (or form small balls and roll these out).
- Leave the discs to rise again for roughly an hour.
- Bake the Crescentine – if possible in the “Tigelmatic”, the only electric bread maker with a heat resistant stone plate.
