- First, cook the chicken breasts in a pot with enough water to cover them by about three fingers. You can add some onion and a few bay leaves for flavour. Cook for 30 minutes over medium-high heat.
- While the chicken cooks, sauté the onion and garlic in a pan with four tablespoons of extra virgin olive oil. When softened, add the paprika, fried tomato, a little salt, and black pepper. Continue cooking over low heat until the chicken is done.
- Once the chicken is cooked, remove it from the broth, shred it, and add it to the onion mixture. Cook together for 15 minutes, adding a little of the cooking broth. Reserve 330 ml of broth for the dough.
- For the dough, bring the reserved broth to a boil with one tablespoon of oil, then add the Farina. Stir vigorously with a spatula; if lumps remain, use a hand blender to smooth them out. Spread the dough in a bowl and let it cool before handling.
- Once cooled, portion the dough and work it with oiled hands to prevent sticking. Flatten each piece, fill with the chicken mixture, close well, and shape with your hands.
- Coat the coxinhas in milk and breadcrumbs. (I opted for a double coating, but that’s optional.) Fry in plenty of hot oil until golden.
- Drain on a tray lined with paper towels and plate. For accompaniments, you can choose various options; in this case, they were served with lemon wedges and tomato sauce.
