The key to a good bruschetta is simplicity. At the heart of this gluten free bruschetta recipe are simple, fresh, good quality ingredients: ripe and juicy tomato, flavoursome red onion, aromatic basil, fresh garlic, salt, pepper and lightly toasted, crisp gluten free bread. So simple, yet absolutely jam-packed with flavour. And so quick to rustle up too. Perfect as a summer appetizer, antipasti or a light and refreshing snack. - Remove the seeds from the tomatoes and dice them.
- In a bowl mix the diced tomatoes and onion with olive oil, basil, salt, black pepper and set aside.
- In a frying pan, slightly toast the bread.
- Rub the peeled garlic on each side of Pane Casereccio slices.
- On a plate, distribute the bread, and put the seasoned tomatoes, spreading them all over the slice.
- To decorate, use basil leaves.
