The light nutty taste of courgette, here cleverly combined with flavoursome Gouda cheese, is an integral part of Mediterranean cuisine.

Ingredients

zucchini
a little bit of
olive oil
a little bit of
parsley
a little bit of
Gouda cheese
or
a little bit of
Emmental cheese
or
a little bit of
Gruyère cheese
or
a little bit of
Mozzarella cheese

Preparation

  • Cut the courgettes lengthways into thin slices and grill on both sides in the grill pan without adding oil or on the grill.
  • Sprinkle with olive oil, scatter finely chopped sprigs of parsley over them and leave for half-an-hour.
  • Cover four slices of the bread generously with the slices of courgette and cheese, put another slice on top, press firmly, and cut into four triangles.

Variations: Grilled aubergines or peppers make equally good sandwiches. If you don’t want any cheese, put in a fried fillet of pork, a chicken breast or pieces of turkey into the sandwich.
