Easter Muffins

For the glaze / icing:
100 g
cream cheese
50 g
butter at room temperature
150 g
icing sugar
vanilla extract
For the decoration:

margarine or butter for hands and work surfaces
food coloring
to taste


  • Beat the butter with the sugar, vanilla sugar and salt until the mixture is light and fluffy, then add the eggs and milk and mix well.
  • Add the flour with the baking powder, passing them through a sieve and mixing well. Pour the batter into paper cups or ramekins, filling them halfway.
  • Place the cups on a baking sheet and bake in a preheated oven at 180° C for about 20-25 minutes.

Cream cheese icing:

  • Whip the cheese, butter and 100g of icing sugar with an electric mixer. Gradually add the rest of the sugar to the mixture, mixing well.
  • Add a few drops of vanilla extract and continue beating until it becomes a soft icing.

Marshmallow fondant:

  • Cook the marshmallow with a teaspoon of water in a double boiler until completely melted.
  • Add 3/4 of the sugar and mix. Pour the mixture onto a buttered work surface and, with greased hands, combine the remaining sugar and knead.
  • Keep the butter on hand: it is important that your hands and the surface are always sufficiently greased, because the mixture is very sticky.
  • Separating the mixture into as many parts as you want colours (you will need a bigger part for the green of the grass).
  • Add the food colouring and any flavourings.
  • Continue to knead until the mixture becomes soft and shiny (if it is too dry, you can add a few drops of water).
  • It should be kept in sealed bags until use, as it tends to dry in contact with the air.

Putting the muffins together:

  • When the muffins are completely cold, you can decorate them.
  • Apply a thin layer of cream cheese icing, which will be the creamy base for the lawn.
  • Pressing a fondant ball in a garlic crusher will give you the blades of grass to stick to the frosting.
  • Then you can decorate as you wish, with chocolate eggs, flowers etc.
