Hummus and Roasted Red Pepper Bruschetta

1-2 Baguette
3/4 cup hummus with lemon
1/2 cup (diced) cucumbers
1/4 cup red onion, finely chopped
1-2 (roasted, diced) red peppers
1/4 cup (crumbled) feta cheese
2 tbsp parsley, chopped


  • Slice baguette into ½ inch rounds. Place on a cookies sheet under the broiler for 2 -3 minutes or until toasted golden brown.  Remove cookie sheet from oven and flip “toasts”. Return to oven and brown other side.  Set aside
  • Prepare vegetable and mix with feta cheese in a large bowl.
  • On cooled “toasts” spread approximately 1 tsp hummus.
  • Top with bruschetta
