Hummus and Roasted Red Pepper Bruschetta
|3/4 cup||hummus with lemon|
|1/2 cup (diced)||cucumbers|
|1/4 cup||red onion, finely chopped|
|1-2 (roasted, diced)||red peppers|
|1/4 cup (crumbled)||feta cheese|
|2 tbsp||parsley, chopped|
- Slice baguette into ½ inch rounds. Place on a cookies sheet under the broiler for 2 -3 minutes or until toasted golden brown. Remove cookie sheet from oven and flip “toasts”. Return to oven and brown other side. Set aside
- Prepare vegetable and mix with feta cheese in a large bowl.
- On cooled “toasts” spread approximately 1 tsp hummus.
- Top with bruschetta
