Gluten-free Greek pita stuffed with grilled mixed meats, fresh lettuce, red onion, and creamy Greek yogurt. A simple, flavorful Mediterranean favorite.

- Cook the skewers in a pan with a drizzle of oil until browned and cooked through.
- Prepare the tzatziki sauce:
- Wash the cucumber thoroughly and grate it with the peel using a coarse grater.
- Place the grated cucumber in a colander to drain excess water.
- To speed up draining, gently mash with a fork and pat dry with paper towels.
- Mince the garlic and mash it into a paste.
- In a bowl, combine yogurt, olive oil, vinegar, salt, and the drained cucumber.
- Mix well and adjust salt to taste.
- Warm the gluten-free pita bread:
- Spray lightly with water.
- Choose one of the following methods:
- Microwave: 20–30 seconds
- Toaster oven: 1 minute on high
- Pan: 1–2 minutes per side over medium heat
- Oven or air fryer: 3 minutes at 350°F
- Assemble the pita:
- Carefully cut and open the warmed pita.
- Remove the skewer from the meat.
- Fill the pita with:
- A spoonful of tzatziki sauce
- Lettuce
- Tomato slices
- Onion slices
- Grilled meat and vegetables
- More tzatziki sauce on top
- Serve hot and enjoy!
