You cannot have Christmas in Italy without a light and fluffy Pandoro (literally, “golden bread”). With its distinctive shape and yellow crumb, it really is the star of all Christmas cakes. Like its seasonal sister, Panettone, it is a soft and spongy sweet bread with a delicately fruity aroma. Pandoro, however, doesn’t actually contain fruit and is much more cakey in taste and texture, which often makes it the favourite seasonal sweet bread, especially among children. This gluten free pandoro recipe gives you all the goodness and sweetness of the original and is equally as good with a mug of hot chocolate as with a glass of prosecco. Any leftovers can be covered in Nutella for breakfast, or used in a gluten free tiramisu!
- Beat the sugar and eggs together in a bowl.
- Add the other ingredients and stir them well to form a smooth consistency.
- Pour the mixture into a buttered pandoro mould (a tall, round mould) dusted with Schär Mix C.
- Preheat the oven to 180°C for fan assisted ovens or 190°C for non-fan assisted (top/bottom heat).
- Place the mould on the bottom oven rack and bake for 45 minutes.
- Leave to cool and dust with icing sugar.
