A typical recipe for the turn of the year, which is sweet in Israel. The honey cake ("Lekach") is eaten on 30 September with sweet apples and a dessert made of carrots.

Ingredients

425 g
100 g
brown sugar
1 tbsp
baking powder
1 tsp
baking soda
1 tsp
ginger powder
1 knife tip
cinnamon
1 knife tip
allspice
60 g
ground almonds
or

walnuts
90 g
sultanas
300 g
honey
100 ml
strong black coffee (lukewarm)
50 ml
brandy

eggs
60 ml
vegetable oil
8 tbsp
ginger confit
a little bit of
icing sugar

Preparation

  • Grease a rectangular oven dish (or closed baking tray) or line it with greaseproof paper.
  • Mix flour, sugar, baking powder, baking soda, ginger, cinnamon and allspice in large bowl. Mix in the crushed nuts and sultanas.
  • Dissolve the honey in lukewarm coffee and add the brandy.
  • Beat the eggs with the vegetable oil in a large bowl and mix in the ginger preserve.
  • Stir the coffee and honey mixture and the egg mixture into the flour and mix all the ingredients to form a dough.
  • Pour the mixture into the dish and cook in a preheated fan oven for approx. 35 mins at 180 deg.
  • Let the cake rest and cut into squares. Dust with icing sugar and serve.
