Christmas Eggnog Bread Pudding with Berries

- Cover a square or rectangular baking tray with parchment paper.
- In a mixing bowl, whisk the eggs with the rest of the ingredients except for the bread.
- Cover the bottom of the tray with 2 layers of the sliced bread & add half of the egg mixture in it.
- Continue with the remaining bread & the balance of the egg mixture.
- Cover the top with parchment paper & aluminium foil.
- Bake in a preheated oven for 25 minutes on 160°.
- Remove the cover, continue baking for 15-20 minutes until golden in colour.
- Rest for an hour before you devour.
- Store in an airtight container for up to 3 days in the refrigerator.
- Reheat in the microwave for a minute or two or in the oven on 160° for 5 mins.
