Gluten-Free Gyozas

These homemade gluten-free gyozas combine a juicy savoury filling with crisp bottoms and a flavour-packed dipping sauce.

  • In a bowl, combine the minced pork, cabbage, spring onion, and the remaining filling ingredients. Mix well and set aside while you prepare the dough.
  • In a separate bowl, knead the Bread Mix, water, and salt until you obtain a smooth, firm dough. Divide the dough into portions of approximately 30-40 g each and roll them out into thin discs using a rolling pin. If the dough becomes sticky, lightly flour the work surface and rolling pin to make it easier to handle. Keep the dough covered with a damp cloth to prevent it from drying out.
  • Once the wrappers are ready, divide the filling into portions of approximately 20 g each and begin assembling the gyozas. When sealing them, try to remove as much air as possible between the filling and the dough. To help seal the edges, lightly moisten them with water and press firmly together.
  • When all the gyozas are filled and sealed, add a small amount of water and oil to a frying pan and place it over medium heat. Once the water begins to boil, remove the pan briefly from the heat and arrange the gyozas in the pan. Return the pan to the heat, cover with a lid, and allow the steam to cook the dough. As the water evaporates, the oil will lightly brown the bottoms of the gyozas, creating a crisp texture.
  • While cooking the gyozas in batches, prepare the dipping sauce by combining all the sauce ingredients in a small bowl. To help dissolve the sugar, you can gently warm the mixture in the microwave or in a small saucepan.
  • Arrange the cooked gyozas on a serving platter and place a small bowl of dipping sauce in the centre for serving.
