Bake the Schär Foldable Flatbread per the packet instructions.
While the flatbread is baking, prepare your flatbread fillings – the only other thing you need to cook is the halloumi.
First, prepare the hot honey for the halloumi – to do this, simply mix together the runny honey, chilli flakes and white wine vinegar in a small ramekin, then set aside.
Now, cut the halloumi into slices and place into a frying pan over a medium heat with a drizzle of olive oil. Cook until golden. Then pour the hot honey into the pan and turn the heat down to low (a low heat is important, else the honey may burn). Once it is bubbling, turn the halloumi to coat it well with the hot honey, until glossy and sticky. Turn off the heat and leave in the pan to stay warm while you assemble the flatbread.
Spread the tzatziki over the flatbread, top with the salad leaves and then place the hot honey halloumi on top. Sprinkle with pomegranate seeds and fresh mint if you have them, then fold the flatbread in half and enjoy!
