This heavenly gluten free nachos recipe is absolutely perfect for any occasion, and super quick and easy to make! Spring, summer, autumn, winter, who cares? Nachos is always the answer. Add it as a side on a Mexican-inspired dinner party, or as a snack for a movie night, everyone will love them. This recipe is super delicious but if you’d like to give it a little twist, you can add any extra toppings of your choice, like extra melted cheese or salsa! - Heat the oven to 200°C.
- Chop the tomatoes and shallot.
- Drain the beans.
- Mix beans, shallot and half of the tomato cubes. Season with salt and pepper.
- Spread the nachos on an oven proofed baking tray.
- Pour the bean-tomato-mix all over.
- Spread the grated cheddar cheese.
- Bake for 10 minutes or until the cheese is melted.
- Serve with fresh tomato cubes, coriander, avocado and lime slices.
