Slippery rice noodles, spicy chili, crunchy peanuts, fresh coriander, tangy lime – all the key ingredients in an authentic pad thai recipe are naturally gluten free and mouth-wateringly scrumptious. The explosion of vibrant flavours and aromas make this the perfect meal for entertaining gluten free guests. There’s a reason why pad thai is one of the world’s favourite noodle dishes. This recipe uses chicken as the protein, but that can easily be swapped out for prawns or extra tofu as you prefer. Twin it with a deliciously fresh coconut cake for a winning dinner party duo.

- Soak rice noodles in cold water for 2 hours or overnight in the fridge.
- Mix all the sauce ingredients in a saucepan. Cook for 10 minutes.
- Heat the olive oil in a large, deep skillet. Add the peeled and chopped onion and garlic. Cook about 5 minutes (medium heat).
- Add the tofu, sliced chicken breasts and vegetables. Cook for a few minutes (high heat).
- Add the drained noodles and sauce. Mix well and cook for about 5 minutes.
- Serve with fresh coriander, chili slices, peanuts and lime wedges.
