This naturally gluten free Thai noodle salad is for fresh food lovers. Are you one of us?

Ingredients

50 g
rice noodles
1
bell pepper
2
avocados
100 g
cherry tomatoes
1 handful
spinach leaves
1 handful
coriander leaves
a little bit of
lime juice
For the sauce:
80 g
peanut butter, unsweetened
2 tbsp
gluten free soya sauce
2 tbsp
sugar
2 tbsp
lime juice
1 tsp
fresh ginger, grated
2 tbsp
hot water

Preparation

  • Cook the rice noodles and rinse with cold water.
  • Slice the avocados and bell pepper. Cut the tomatoes in half.
  • Mix all the sauce ingredients together.
  • Place the drained noodles on the plate. Spread half of the sauce over the noodles.
  • Add the bell pepper slices, avocado slices and tomatoes.
  • Sprinkle the lime juice over the avocados to avoid them becoming dark.
  • Add the spinach and cilantro leaves.
  • Serve with the remaining sauce. If needed add some more water to make the sauce more running.
