This gorgeously refreshing soup is a lovely starter for a summer day or a perfectly light lunch in itself.
As summer heats up, there’s no better way to cool down than with a fresh, raw tomato soup. This gluten free tomato soup recipe is inspired by traditional Andalusian gazpacho, and is cool, refreshing and bursting with summery flavours. The tomato really is the star of the show, so it’s important to use ripe and juicy, high quality tomatoes here to get the full fresh and vibrant flavour. Cracking with gluten free crusty rolls on the side.
