Small tarts with mascarpone cream and fresh forest fruits…they don't just look great, they taste great too!

Ingredients

For the dough:
250 g
125 g
butter, finely chopped
125 g
sugar
4
egg yolks
a little bit of
grated organic lemon peel
For the filling:
350 g
mascarpone cheese
or
350 g
ricotta cheese

egg yolks
100 g
sugar
200 g
raspberries
100 g
blackberries
150 g
blueberries
100 g
strawberries

Preparation

  • Mix the egg yolks and sugar together until they form a creamy mixture. Add the flour, butter and lemon zest.
  • Mix everything together briskly until a smooth dough is formed.
  • Spread it into a greased spring form tin that has been coated with flour and poke holes in the dough so that no air bubbles will form during baking.
  • Bake the dough at 180º C. (350° F.) in a preheated oven for 15 minutes, remove and allow to cool.

For the the filling:

  • To do so, mix the egg yolks and sugar together until they form a creamy mixture. Add the mascarpone.
  • Spread the mascarpone crème on the pastry.
  • Wash the various berries and then decorate the crème with them.
