Muffins With Pumpkin And Chocolate Drops

Pumpkin is always good, no matter how it's prepared, in desserts or savoury dishes, on its own or with other ingredients, seasoned or natural. I love it, and I'm trying out lots of recipes with this magical ingredient. These muffins, for example, are an irresistible snack!

- Place a pan with water on the hob and add the pumpkin cut into cubes
- Cook until the cubes soften
- Leave to cool
- When the pumpkin has cooled, place it in a bowl and add 150 ml of rice milk (set the other 50 g aside)
- Make a purée of pumpkin and milk in a blender
- Pour the remaining 50 g of rice milk into another bowl along with the sunflower oil and eggs
- Use a whisk to break up the eggs
- Add the pumpkin purée, Mix It flour, sugar and powdered yeast
- Mix with the whisk to obtain a smooth paste
- Add 50 g of chocolate drops and mix again
- Fill the muffin trays to 3/4 level with the paste then place the chocolate drops kept aside on top
- Place in the oven at 170° and bake for 20 minutes
