Valentina GlutenFree can't resist lemons grown naturally in the garden, and uses them as soon as they're picked to make these cupcakes. The recipe is quick and simple, and you'll be pleasantly surprised by the results!

- Use two bowls to keep the dry and wet ingredients separate. Grate the lemon rind into the bowl with the flour, yeast and sugar and mix
- Beat the eggs and butter in the other bowl and when they're well blended add them to the flour mixture. Beat with a whisk, then add the milk
- When the mixture is smooth and even, fill the cupcake trays to just over halfway, place in the oven at 170°C and bake for around 20 minutes (test with a toothpick)
- Remove the cupcakes from the oven and leave to cool. Whip the cream and colour it if you wish with food dyes
- Place the cream in a piping bag and decorate as required. The cupcakes can be finished off with fresh fruit, lemon rind or anything else that takes your fancy
