This gluten free crackers recipe makes batches of light, crunchy and cheesy bites that are just too good to leave at home. Once you try them, you will never want to have a cracker-free snack time again. Try adding different herbs to the dough (rosemary, basil and thyme are always a good place to start) to get a variety of flavours suitable for all seasons. But be warned, no matter when you eat them, these crackers are seriously addictive!

- Mix flour, salt, sugar, baking powder and Parmesan, and then add all the liquid ingredients.
- Knead as briefly as possible to produce a consistent dough.
- If the dough does not bind, add some water (max.10g) and mix again.
- Form the finished dough (slightly sticky) into a roll 5 cm in diameter, wrap in cling film and then put in the freezer for an hour.
- Unpack the frozen bar and cut it with a very sharp knife into 2 mm slices.
- Heat the oven to 200°C on a fan setting (210°C top/bottom temperature).
- Place the dough slices on a tray lined with baking paper and bake for 5 – 6 minutes (depending on the desired colour).
