There’s just something about mini-sized food that makes it more flavoursome and fun to eat. Perhaps because all the taste is concentrated in a smaller portion, or because it just looks so cute. Either way, this recipe for mini gluten free pizza is a prime example. The light and crispy dough seems to melt in your mouth, while the tangy tomato sauce and juicy vegetables take on a more intense taste. As they’re such a handy size, they’re perfect for passing round at parties. Warning: they’re dangerously moreish.

For the dough:
- Put the flour into a bowl.
- Stir in the yeast and salt.
- Pour in the water and olive oil.
- Knead for 5 minutes until smooth. Cover with a tea towel and set aside.
- Rise the dough until it is doubled in size.
- Heat the oven to 230°C convection or 240°C top / bottom heat.
- Divide the dough into 24 equal-sized pieces on a flour-dusted surface.
- Spread the dough on the baking sheet from the center to the edges in order to create rounded little crusts. Let them rise for another 15 minutes.
For the topping:
- Spread the tomato pulp over. Season with salt.
- Add chosen toppings.
- Bake the Pizzette for approx. 12 minutes.
- Add basil leaves before serving.
