Hummus is the Arabic word for chickpea and is hence how the dish gets its name. Popular in Middle Eastern cuisine this dip is slowly taking over the world as it is becoming more and more commonplace in western diets. There's a reason for that and once you try it you'll know it! This beetroot twist on the classic recipe adds a new level of flavour and a really fun interesting look to a dip that goes with bread, vegetables, crackers ... Whatever you could think of really! This gluten free hummus recipe couldn't be quicker easier or more delicious.
- Cover the beetroots with an aluminium foil and bake in the oven for approx. 1-2 hours at 200°C.
- Once cooked, remove the skin and cut into small cubes.
- Combine all the ingredients in a bowl and mix in a food processor until smooth. Add water to improve consistency.
- Serve in a small bowl or as topping on Saltí crackers.
