- Drain the cooking liquid from the chickpeas. Place them in a bowl, add the spice mix with a pinch of salt, and mix well.
- Spread the chickpeas on a baking tray and drizzle with oil. Bake at 220°C for 15 minutes.
- Meanwhile, blend 180g of feta with the cream cheese, a tablespoon of water, and a tablespoon of extra virgin olive oil.
- Cut the remaining feta into small cubes.
- Cut the cherry tomatoes into wedges and season with oil and salt.
- When the chickpeas are ready, remove them from the oven and prepare the pita.
- Lightly spray the pita with water and heat as desired: in the microwave for 20-30 seconds, in the toaster for 1 minute at maximum power, in a pan over medium heat for 1-2 minutes per side, or in the oven or air fryer at 180°C for 3 minutes.
- Once the pita is heated, carefully cut it open.
- Fill with some feta cream, lettuce, cherry tomatoes, crispy chickpeas, feta cubes, cucumber slices, and more cream.
- Serve everything hot.
