Chocolate Flan With Vegan Hazelnut Shortcrust Pastry

Have you ever tasted a gluten-free flan made with vegan shortcrust pastry? Our version with hazelnut crumble is irresistible. This dessert is gluten-free, lactose free and contains no eggs, but it's delicious!

- Put the water, oil, salt and sifted sugar into a bowl and add the flour, yeast for desserts and hazelnuts. Mix quite briefly by hand until you obtain a smooth, even paste
- Start mixing with a hand beater, then continue mixing by hand when the paste is compact. Add the hazelnut crumble and form into a loaf shape
- Pre-heat the oven in static mode to 180°
- Spread the shortcrust pastry over a sheet of ovenproof paper and roll out to a thickness of 3-4 mm, adding small quantities of flour to prevent sticking
- Cover a 20-22 cm mould with the shortcrust pastry, pierce the bottom and cook in boiling water for 25 minutes. Remove from the oven and allow the shortcrust shell to cool
- Use the remaining shortcrust pastry to make small biscuits to decorate the flan. Bake them in the oven at 180° for 15 minutes
- Finely chop 200g of chocolate and in the meantime heat the vegetarian cream in a pan until it only just reaches boiling point
- Pour the vegetarian cream over the crushed chocolate and leave to rest for a couple of minutes. Mix with a whisk until the chocolate is fully melted
- Pour the chocolate cream into the shortcrust shell and leave to cool. Decorate the surface of the flan with the small biscuits and hazelnut crumble
