- First put oil and water in the kneading bowl, then salt, peeling flour and yeast at the end.
- Set the kneading machine to minimum speed for the first 30 seconds, then let it run at medium speed for 5 minutes.
- Push down the raw materials sticking to the edge so that the ratio between the individual ingredients is maintained.
- Cover the bowl with a damp cloth and let it rest in a warm place for about 45 minutes.
- After the dough has rested, weigh out 80g pieces of dough and form buns. Dip with flour if desired.
- Let the dough pieces cook for 30 minutes on the baking sheet lined with baking paper.
- Preheat the oven to 210 ° C convection or 220 ° C top / bottom heat. Place an empty, fireproof container on the bottom of the oven.
- After cooking, thinly coat unfloured rolls with water and cut into them as desired (max. 5 mm deep).
- Put the rolls in the oven, pour a glass of water into the heated container on the bottom and close the oven door immediately.
- The baking time is approx. 25 minutes, depending on the desired color and size of the pastry.
- Take the baked rolls out of the oven and let them cool on a rack.
- Tip: Freshly cooled rolls can be frozen.
