Blueberry and Lemon French Toast


Pancake inspired French Toast for a quick and simple breakfast or brunch!


6 slices Wholesome White Loaf
200 ml milk
2 eggs
75 g icing sugar
grated zest of an unwaxed lemon
juice of a half lemon
6 tbsp maple syrup
For the topping:
100 g blueberries
juice a quarter lemon
100 g icing sugar
For serving:
raspberries, frozen


  • Beat the milk, eggs, icing sugar, lemon rind and lemon juice together
  • Soak the 6 slices of bread in the mixture before frying in a hot pan for 2 minutes on either side using 1 tbsp maple syrup per slice.
  • Heat the 100g blueberries in the microwave for 2 minutes to make a  compote
  • Mix 1/2 juice of a lemon and 100g icing sugar to create a lemon icing and drizzle over the stack of French toast before serving with the blueberry compote, yoghurt and frozen raspberries.
