Blueberry and Lemon French Toast
Pancake inspired French Toast for a quick and simple breakfast or brunch!
|6 slices||Wholesome White Loaf|
|75 g||icing sugar|
|grated zest of an unwaxed lemon|
|juice of a half lemon|
|6 tbsp||maple syrup|
|For the topping:|
|juice a quarter lemon|
|100 g||icing sugar|
- Beat the milk, eggs, icing sugar, lemon rind and lemon juice together
- Soak the 6 slices of bread in the mixture before frying in a hot pan for 2 minutes on either side using 1 tbsp maple syrup per slice.
- Heat the 100g blueberries in the microwave for 2 minutes to make a compote
- Mix 1/2 juice of a lemon and 100g icing sugar to create a lemon icing and drizzle over the stack of French toast before serving with the blueberry compote, yoghurt and frozen raspberries.
