Fill your kitchen with the unbeatable aroma of baked goodness with this recipe for make-at-home gluten free chocolate cookies. It delivers the holy grail of crispy at the edges and chewy in the middle that will have both your coeliac and non-coeliac friends coming back for more. And at 10 minutes’ preparation time and 5 minutes’ baking time, they are the perfect way to make all your guests feel welcome – even those who turn up for a cuppa unannounced.
- Preheat the oven to 170°C fan setting (180°C top/bottom temperature).
- Gently beat the melted butter with sugar and raw cane sugar until slightly creamy, then add the egg and continue beating for 2 minutes. Make sure to keep scraping the ingredients from the sides of the bowl.
- Afterwards mix together the Mix It, baking powder and chocolate mix. Mix the ammonium with a tablespoon of water and fold into the butter.
- Slowly fold the flour mixture into the butter and make sure no more flour residues are visible.
- Now use a spoon to cut off pieces of about 25 g from the dough and place on a tray lined with baking paper. Press flat until they are 3 cm. Bake directly for 8 to 10 minutes and to cool, pull the whole pastry with baking paper off the baking tray. Attention, immediately after baking, the cookies are still very soft and can fall apart.
