This truly tasty and juicy salad is simple to make with a mix of green salad ingredients, including cabbage, cucumber, chives and scallion – all very finely chopped (the secret to this recipe) – and a delicious dressing made from onion, garlic, spinach, basil, extra virgin olive oil, a splash of vinegar, nutritional yeast and a handful of cashews, all blended together. It is not only gluten-free but vegan friendly, too!

3. Butter Boards

Butter boards have become the ultimate viral recipe, with everyone having a go at their own version. Spread room-temperature softened butter on a dish or a small board and then get creative – you can add your favourite finely chopped greens, seeds, dried fruit, herbs and even edible flowers before drizzling with balsamic vinegar or another favourite dressing. Serve with toasted slices of gluten-free bread.
